Place the chicken in a 1 gallon zip lock bag on a plate. |
Pour in 1-16oz bottle of Zesty Italian salad dressing. Place in the fridge for at least 8 hours. |
When you are ready to cook, chop up some peppers - small to medium pieces. |
In a large skillet pour in just enough olive oil to cover the bottom of the pan. Add your peppers and using tongs add the chicken. Cook on medium-high until chicken is done. Make sure to dispose of the remaining dressing as you had raw chicken in it. |
While the chicken and peppers are cooking make your rice according to the instructions. To ensure your chicken is done you can cut off a small piece to make sure there is no pink. |
Place your rice on your plate first and then using tongs (if you are using the same ones as before make sure to wash prior to using since you did handle raw chicken with them) place some chicken and peppers over the rice. |
