You will need corn meal, flour, baking powder, baking soda, salt, sugar, buttermilk, eggs, butter and can of cream corn.
You will want to use Corn Meal, not a Cornbread mix for this recipe. |
You will first mix your dry ingredients; 2 cups corn meal, 1 cup flour, 3 teaspoons baking powder, 1/2 teaspoon baking soda, 1 teaspoon salt and 1 tablespoon sugar. Mix together and set aside. |
In a separate bowl whisk together 1 cup buttermilk and 3 eggs. |
Add to your buttermilk/egg mix - 4 tablespoons melted butter and 1-14.75/15oz can of cream corn, mix well. |
Pour your liquid mixture to your dry mixture and mix well. |
Pour or scoop your mixture into a greased 9x9 pan. |
Bake at 425 for 20-25 minutes or until a toothpick inserted in center comes out clean. Let cool for about 10 minutes before cutting. |
Slice up and serve with one of your favorite soups or stews or just with some butter! Enjoy!! |
