Anna's Chicken Lo Mein



This recipe makes a very LARGE amount, you can cut it down by using half the pasta (or less) fewer veggies and half the chicken.  The prep and cooking will all be the same.


Take 5 good sized carrots, cut off both ends and peal.


You don't have to do this step but makes the presentation of the veggies more appealing.  You use the tool pictured to just cut grooves into the carrots.

You will use two zucchinis.  Cut off the ends and then use the tool to cut the grooves.  Rinse off the carrots and zucchini.  

For the zucchini first cut in half, the long way.

Next cut at a slight angle in small slices just not too small.

You will cut the full carrot at a slight angle also in the thinner slices.

Now cutting up your broccoli.  You will use a full head.  Cut off the tops and then cut into smaller pieces.  Easy way to do this is by cutting from the bottom up.  

You can also use the top of the trunk of the head of broccoli.  The bottom is to hard for this.

You will want to peal the outside off the top of the trunk best you can.  The one on the left is not pealed.  Then cut up (the long way) the trunks you have and add to your cut up trees of broccoli.

You will need a full head of garlic for this recipe.

Separate and peal each clove.

You will need to dice up each clove.  Easy way to do this is by cutting one way then the other and then chopping in small pieces.

Here is one clove all chopped up.  Place all the chopped garlic in a bowl and set aside. 

For this recipe you will need 3 pounds of boneless, skinless chicken breasts.  Trim off any fat you can and then rinse with cold water.  Slice each breast in thin slices.

To cook your chicken, in a large sauce pan on high, heat small amount of oil and once warm add about 1 tablespoon of the garlic you chopped up.  You want to brown this before adding your chicken, just make sure you keep stirring as it will brown up quick.

Now add your chicken.  Cook till done, will be a nice white color.

Too your chicken you will now add 4 tablespoons of oyster sauce (picture below), this is a thicker sauce.

Add 1 tablespoon salt and a few dashes of black pepper.  Keep cooking your chicken for about another 5 minutes, stirring occasionally. 
While the chicken is cooking you will need to blanch your veggies.

Bring a pot of water to a boil, add salt - this will keep the bright colors of the veggies.  Do your zucchini first.  Once at a low boil dump in and cook for only 2-3 minutes, you don't want to over cook.  Strain and set aside. 

You can cook the zucchini and carrots in the same pan of water, just keep the water going.   Your broccoli will get a vibrant green color to it.  Again cook 2-3 minutes.  Strain and you can put in the same bowl as your zucchini. 

Do your carrots last as sometimes the color will bleed onto the zucchini.  You will need to cook the carrots for about 4-5 minutes.  Strain and put with other veggies.  

Once all your veggies and chicken is done place all in the same container and mix up.   

Cook your noodles according to the directions on the box(s) you will use 1-16oz box fettuccine and 1-48oz box of regular spaghetti.  As it is done, rinse with cool water and remove from the pan into a strainer a hand full at a time.

 This is the sauce you will need to fry your noodles.  You can find this at most Asian markets.  This is the front of the bottle.

Here is the back, you want to make sure you get the Sweet Sauce. 

In a large wok, heat on high, add 2 tablespoons of oil and 1 teaspoon of your garlic, lightly brown.  Next add 3 tablespoons of your Sweet Sauce.   Once it bubbles up like this you will add about 4 handfuls of your cooked noodles. 

You need to stir constantly so the noodles don't burn or get stuck.  

Add a couple dashes of salt and pepper.
Easiest way to stir your noodles, use chopsticks.  

Once all the liquid is gone your noodles are done.  Add to your veggie and chicken mix.

You will repeat these steps till all your noodles are done.

If you want them a little darker, just add a little more of the Sweet Sauce.  If you added too much just put in a few more noodles.  

Once all your noodles are done and in the large bowl, mix up well.  Easiest way to do this as you can see is just put on some plastic gloves and mix up.  Remember you just put cooked noodles in there so it will be warm.

Once you have mixed well you will want to try a small bite to see if the flavoring is right.  Most likely you will need to add a small dusting of salt.  Mix well and try again.  If you want to add more salt or pepper, feel free to do so. 

Dish up and enjoy!

You can use whatever veggies you like just make sure you blanch them and not fully cook them.  Also you can do shrimp or beef for this!
