Zucchini Bread

You will need 2 good sized zucchinis, flour, salt, baking soda, baking powder, cinnamon, sugar, eggs, oil, vanilla and chopped walnuts (optional). You will need 2 good sized zucchinis.  Cut off ends and rinse with cool water. Grate the zucchini to get 2 cups.  Set aside.  In a medium sized bowl place your sifter.  In the sifter pour in 3 cups of flour, 1 teaspoon salt, 1 teaspoon baking soda, 1 teaspoon baking powder and 3 teaspoons cinnamon.  Sift into the bowl.  Set aside.  In a large bowl combine 3 eggs, 1 cup oil and 3 teaspoons vanilla.  Mix well. Add 2 1/4 cups of sugar.  Mix well. Pour your dry sifted mix into your liquid mix.  Stir well, this will be thick.  Add your 2 cups of grated zucchini and 1/2 cup chopped walnuts (optional).  Mix very well. Butter then flour 2 loaf pans (9x4)  Pour your mixture into the pans evenly. Bake at 325 for 40-60 minutes. ...

Cheesy Crack Potatoes

You will need butter,onions, ham, sour cream, cream of chicken soup, frozen hash brown, cheese and corn flakes. Start by finely chopping up 1/2-3/4 of an onion (just depends on how much you like onions - I use about 1/2 an onion).  Melt 1 stick of butter (on medium) in large skillet.  Once butter is melted add your onions.  Saute 5-10 minutes or until soft. While the onions are cooking chop up 8oz of ham.  I use a packet of diced ham and just chop up the ham a bit more. Once your onions are done, remove from heat.  Add your ham, 8oz sour cream and 1 (10.5oz) can of cream of chicken soup.  Mix well. In a large bowl combine 32 oz of frozen hash browns and 2 cups shredded cheddar cheese. Add the mixture in your pan and mix very well. Spray a 9x13 pan with cooking spray.  Pour in your mixture and flatten out the top. Crunch up corn flakes to equal 2 cups.  Combine with 1 stick of melted butter. Using your h...

Anna's Chicken Lo Mein

This recipe makes a very LARGE amount, you can cut it down by using half the pasta (or less) fewer veggies and half the chicken.  The prep and cooking will all be the same. Take 5 good sized carrots, cut off both ends and peal. You don't have to do this step but makes the presentation of the veggies more appealing.  You use the tool pictured to just cut grooves into the carrots. Here is a close up on the tool used. You will use two zucchinis.  Cut off the ends and then use the tool to cut the grooves.  Rinse off the carrots and zucchini.   For the zucchini first cut in half, the long way. Next cut at a slight angle in small slices just not too small. Zucchini all cut up. You will cut the full carrot at a slight angle also in the thinner slices. Carrots all cut up.
