Fruit Fluff

Image
You will need Cool Whip, vanilla pudding, fruit cocktail, mandarin oranges, pineapple and bananas. First combine 1-16oz container Cool Whip and 2 single serve vanilla puddings (like shown above) in a large bowl. Drain the juice off 1-15oz can fruit cocktail, 1-11oz can of mandarin oranges and 1-8oz can pineapple (if it is bigger pieces you will want to cut them up a little).  You can leave in the strainer for about 10 minutes just to make sure most of the juice is drained out. Combine with the cool whip mix and stir well. Cut up 2 bananas, you can do slices (thinner) or chunks like I have done here.  Stir up the mixture very well and chill in fridge for about an hour.  Dish up and ENJOY!!

Zesty Italian Chicken w/Peppers over Rice

Image
You will need boneless skinless chicken, zesty Italian dressing, variety of peppers, olive oil and cooked rice. You will need 1 pound of boneless, skinless chicken.  It needs to be either cut thin or if you use breasts you will want to pound it down till you have it thin, this is to ensure the marinade can soak in well. Place the chicken in a 1 gallon zip lock bag on a plate. Pour in 1-16oz bottle of Zesty Italian salad dressing.  Place in the fridge for at least 8 hours. When you are ready to cook, chop up some peppers - small to medium pieces. In a large skillet pour in just enough olive oil to cover the bottom of the pan.  Add your peppers and using tongs add the chicken.  Cook on medium-high until chicken is done. Make sure to dispose of the remaining dressing as you had raw chicken in it. While the chicken and peppers are cooking make your rice according to the instructions.  To ensure your chicken is done ...

Monkey Bread

Image
You will need sugar, ground cinnamon, refrigerated biscuits, butter, brown sugar and cinnamon. Combine 3/4 cup sugar and 2 teaspoons ground cinnamon in a 1 gallon zip lock bag. Cut up 4-7.5 oz cans of biscuits.  Cut each biscuit into 4-5 smaller pieces.  As you cut up each can of biscuits place them in the zip bag with sugar & cinnamon mix and shake up a bit. As you can see some of the bits will have more of the mixture than others, that is ok. Spray a 10-12 inch bunt pan with cooking spray.  Place your coated biscuit bits in the pan as evenly as you can. Combine 1 stick of butter (melted), 3/4 cup (packed) brown sugar and 1 teaspoon ground cinnamon. Pour the mixture evenly over the biscuit bits. Bake at 350 for 40-45 minutes, will have a nice golden brown look and smells really yummy!!  Let cool in pan for about 5 minutes, Place a plate (big enough to cover the pan) on the pan and flip over.  Remember your...

Chicken - Bacon - Ranch Pasta Salad

Image
You will need pasta, tomatoes, ranch mix, mayo, bacon bits, can chicken and cheese. Measure out 2 cups uncooked pasta, you will want a smaller size pasta.  I used mini bow tie this time.  Cook as directed on box. While the pasta is cooking cut up 1/2 to 3/4 of a plump tomato making sure to de-seed it. In a small bowl combine 1packet ranch mix, 1/2 cup mayo and 1 1/2 tablespoons bacon bits. Open and drain well a 5oz can chicken breast.  Using a fork you will want to break up the chicken. You will also measure out 2/3 cup of finely shredded cheddar cheese. Once your pasta is done cooking, drain well and then rinse with cool water to cool the pasta completely. Make sure you get off as much of the water as possible.  Place the pasta into a large bowl, add the ranch/bacon bits mix and stir very well making sure the pasta is well coated. Add your chicken next and mix well.  Next add your tomatoes and cheese, mix well. Place ...

Oreo Balls

Image
You will need Oreo cookies, cream cheese, almond bark and colored sugar for decorating. Start by crushing 1 - 15.5oz package of regular Oreo's (yes you can use other flavors like the mint but it is best to not use the double stuff).  Put a few in the bowl at at time and crush, add a few more and just keep crushing.  You want to make sure you don't have any chunks that are too big so just shake the bowl a little and keep crushing. Once you have the Oreo's really crushed add 1 - 8oz cream cheese (making sure it is softened first).  Make sure you stir it in slowly or you will have crushed cookies everywhere! It will look like this when all mixed.  Place this in the fridge for about 15 minutes. Line a pan with wax or parchment paper.  Take about a golf ball size amount in your hands and mush it together and then form your ball.  Mushing it together first will help it keep its shape when dipping (don't want cookie bits everywhe...

Better Than Sex Cake

Image
You will need box cake mix (and required items to make the cake listed on box), condensed milk, caramel ice cream topping, Cool Whip and chopped up Heath or Skor bars. Start by baking a chocolate cake by the directions on the box, make sure you do not over cook as you do not want crispy edges. Let the cake cool completely.  Once completely cool use a fork and poke holes all over the cake, make sure you get the edges too.  Combine 14oz sweetened condensed milk (I use Carnation brand) and about 12.25oz caramel ice cream topping.  Pour slowly over the cake.   In about 15 minutes it will mostly soak in and as it sets longer it will soak in more. Cover with around 12-14oz of cool whip. Chop up Heath or Skor bars and sprinkle over the top.  Up to you how much or little you use but you want it covered. You will have some finely chopped pieces and some bigger chunks but you don't want them too big. Keep in fridge ...

Fiesta Cheese Torta

Image
You will need cream cheese, taco seasoning, green onions, cheese, tomatoes and black olives. First combine 2-8oz packages cream cheese (softened) and one tablespoon taco seasoning, mix very well. I use this seasoning instead of the taco seasoning - has a great flavor!  Next add 1 teaspoon garlic powder and again mix well. Cut up 2 green onions into small slices. You will start at the green end and cut into the white but not using much of the white end as you can see above. Stir in the green onions and 1 cup of shredded cheddar cheese, mix well. Cut a plump tomato in half, cut one of the halves in half again and remove the center. Center of tomato removed, make sure to scrape out any seeds also. Cut into thin slices and then into small cubes of tomato.  You will use about 1/2 of the tomato. Take a smaller but deeper bowl and line it with plastic wrap (I also put a rubber band around the outside to help keep the plastic ...
