Grandma James Stew

Image
Stew beef, flour, oil, celery, cabbage, can sliced carrots, can sliced potatoes, minced onions, Lawry's seasoning salt, garlic powder, onion powder, salt, pepper, water and ketchup. You will need around 2 pounds stew beef.  As you see here some of the pieces are bigger.  Just use your meat scissors to cut up them up to bite size pieces and to trim off some fat you can see. Place your bite size pieces into a large bowl. Coat the meat with a light layer of flour.   I used a little over 1/3 of a cup for this. In a pan with a thicker bottom you will heat about 1/3 cup of oil, heat at medium to high heat.  This will be the pan you will add everything to so you will want to make sure it is large enough. Once your oil is ready add  you meat a bit at a time, don't just dump it in. The meat will look a bit 'soupy' when done, remember you have oil and flour in there.  Once the meat is done - you can't see anymore pink, reduce t...

Aunt Sherrey's Clam Dip

Image
This dip is amazing!  Does not have a 'fishy' taste as I don't care for fish.  One bite and you will be hooked! You will need cream cheese, Miracle Whip, lemon juice, worcestershire, onion powder, garlic powder, minced clams and the juice from the claims. I made a double batch this time around to share with friends  but you can easily do a single batch too.  I will be providing the directions for a double batch.  First you will need 2-8oz packages of cream cheese (softened) and 12 rounded tablespoons (as seen above) of miracle whip.  Mix together first till well blended, you can use a hand mixer if you like - I do. One you have your cream cheese and miracle whip mixed up you will add: 1 teaspoon lemon juice, 2 teaspoons worcestershire sauce, 1 teaspoon onion powder and 1 teaspoon garlic powder.  Mix very well. Next are the clams, you will need around 16oz (make sure you save some of the juice they are in).  I usually can...

Rainbow Cupcakes with (new) Buttercream Frosting

Image
Not going to lie, these do take some time to make but the looks on peoples faces will make it all worth it!! I used 2 white cake mixes (following the directions on the box).  Separate out the batter into 6 bowls.  Add your food coloring to get the color of each that you want. I started with the red.  You will use a small amount of each color.  Using the teaspoon you used to mix up each color you will use about 1/2 of that teaspoon of each color.  Remember you only want to fill each paper to around 2/3 full. Here is a picture of the red in the bottom and the small dab of orange on it.  You will want to spread out each color as you add it.  Best way to do that is by dipping one of your fingers in water and starting from the center circle out.  You will get the hang of it pretty quick as you will be doing that alot. Here are the cupcakes pre-baking with all the layers.  As you can see I didn't spread the pu...

Jason's Cheese and Rice

Image
This recipe was given to me by my friend Jason and with the ok I had to share it as it is sooo good and you can easily change it up! You will need cooked white rice, bacon, Velveeta cheese, cans of different veggies, mushrooms, cream of mushroom soup and butter. You will first want to start your rice.  I cook mine in the microwave.  It will be 3 1/2 cups instant uncooked white rice and 3 1/2 cups water and microwave loosely covered for 5 minutes (unless your directions for time say otherwise).  While that is cooking cut up about 12 pieces of pre-cooked bacon into small pieces.  Once the rice is done remove from the microwave and leave covered  for at least 5 minutes.  While that is setting you will want to start melting 16oz of Velveeta cheese, make sure you cook this slowly and on a lower heat so you don't scorch the cheese.  Once it starts to soften you will want to stir it every so often. While the chee...

Breakfast Roll Wrap-Up's

Image
I came up with this little creation on my own.  Hope you enjoy! You will need eggs, salt, pepper, cheese, bacon, sausage and crescent rolls. In a small to medium bowl mix/scramble 8 eggs, salt and pepper to your liking (No milk). Lightly spray an 8x8 glass pan with cooking spray.  Pour in eggs. Bake at 350 for around 20 minutes.  Will be golden brown on top. Let eggs cool.  Cut edges off.  Cut down the center and then cross ways to make at least 16 rectangles. Take sliced cheese (I use american) cut first slice all the way across the bottom.  Next slice all the way down, creating the small square you see at the bottom, that little square is waste so I just eat that little piece.  Now cut the remaining larger square into 4 more slices - will have a total of 6 per slice of cheese. You will want to either use heat and serve or pre cook your bacon and/or sausage DO NOT use uncooked meat.  You will not ...
