Don't Be Blue Cupcakes with Buttercream Frosting




Mix White cake mix as directed on the box

Make sure you scrape the sides of the bowl at least once while mixing

Add food coloring to make it fun!!

I used about 30 drops to get this color

Fill paper cups around 2/3 full

Here you can see about how much room is left at the top of the paper cups

Bake per the directions on the cake mix box, I do usually take about 1 minute off.  Poke a toothpick in a few of them to make sure it comes out clean.  Easy way to get the cupcakes out, tilt the pan and pop out the cupcake by the paper.
Let cool completely - at least 30 minutes

 And now for the Buttercream Frosting

Soften two and a half sticks of butter (not margarine) can be salted or unsalted - I have used both and prefer salted.  Add 1/8 teaspoon salt, 2 teaspoons vanilla extract, 2 tablespoons heavy cream and 2 1/2 cups confectioners' sugar aka powdered sugar.

Mix very well till nice and creamy - about 2 - 3 minutes scraping the sides every so often

Use a small ziplock bag fold out the top and fill about 3/4 full (I use a smaller measuring cup to fill it).  Zip it up, squeezing out as much of the air as you can and then cut a small piece off one of the bottom corners.

Have some frosting!  As you can see mine are not perfect but I have fun with it and everyone will enjoy your effort

Add some sprinkles to add a little more color/fun!
