Chicken and Penne



You will need boneless skinless chicken breasts, olive oil, mushrooms, garlic and herb seasoning, pasta and shredded cheese for topping.


You will need 3 good sized boneless, skinless chicken breasts

Cut chicken up into small bite sized pieces into pan with 1/4 cup olive oil - you can use pure, extra virgin or regular olive oil.  Cook on medium-high heat.  You will want to get your water on at this time so you can cook your pasta.

Add 2 tablespoons of a seasoning you like.  This is what I use (YUMMY)

As the chicken is cooking mix in 8oz can drained sliced mushrooms.  Make sure you are stirring occasionally.  Once you don't see anymore pink on the chicken lower heat to low/medium.

This is the pasta I use.  You can use the Mezze Penne or regular Penne or different shapes if you so like.  Make sure it is 1 pound box/bag.

Cook the pasta per the instructions on the box.  To keep the pasta from sticking while cooking I sprinkle in some salt into the water instead of using oil.  You do want to test the pasta to make sure it is done.  Take one of the noodles out and place it on a paper towel, let cool for a few seconds and eat.  If it is still a little chewy, cook for a few more minutes and test again.
**Hint - When draining your pasta pour it away from you so if it happens to splatter it will not splatter on you.

Pour the chicken mixture into the pan you cooked the pasta in and then add the pasta once well drained.  Add little under 1/4 cup olive oil - again your choice.  Mix well.
Scoop serving(s) into a bowl(s) and sprinkle with cheese, use as much or as little as you like!

This dish is also very good left over as it will make plenty!
