Cheesy Corn Pasta Bake

You will need a regular can of corn, can of cream corn, cream cheese, butter, Velveeta cheese, uncooked pasta and shoestring potatoes. First combine 1-15oz can corn (make sure to drain), 1-15oz can cream corn, 4oz softened cream cheese, 2 tablespoons softened butter and 1 cup (8oz) Velveeta cheese. For the cheese; first slice then using your fingers just pinch off small pieces.  Add 1 cup uncooked pasta, mix well. Add 1/2 cup shoestring potatoes, mix well. Spray a 9x13 pan and pour in your mixture, flatten out. Sprinkle on a layer of the shoestring potatoes.  Bake at 350 for one hour. Let rest about 5 minutes, serve up and ENJOY!!

Fresh Strawberry Cupcakes with Coconut Frosting

For the cupcakes you will need sugar, butter, eggs, vanilla, flour, salt, milk and strawberries. For the frosting you will need butter, powdered sugar, vanilla, milk and sweetened coconut.  First blend 1 cup of sugar and 1/2 cup (1 stick) of softened butter with mixer till light and fluffy. Next add 2 eggs, 2 teaspoons vanilla, 1 1/2 cups flour and 1/4 teaspoon salt.  With mixer blend well, start on low and then medium, making sure to stop and scrap the sides down a couple of times.  Chop up 1 cup of fresh (not frozen) strawberries.  Make sure you cut up into smaller pieces. Easy way to cut them up: cut off tops, cut in half, cut each half into 4-6 cuts then 4-6 cuts the other way.  You will get nice small pieces this way. Add your chopped up strawberries to your mixture and using your mixture (starting on low then medium) mix in well.  If your batter is a bit thick add 1-2 tablespoons of milk. Cheesy Chicken with Rice

You will need uncooked white rice, cream of mushroom or cream of chicken soup, milk, boneless skinless chicken breasts and cheese. Combine 2 1/2 cups uncooked white rice, 26oz (family size) can of cream of mushroom (or cream of chicken) soup and 1/2 cup milk.  Mix well. Spray with cooking spray 9x13 baking pan.  Pour and spread out your mixture.  Place 2-4 boneless , skinless chicken breasts cut up into thinner slices (about an inch wide) and place your chicken on top of your mixture. Bake at 350 for 30 minutes and then flip your chicken.  Continue cooking for 15 more minutes. Remove your pan and sprinkle 2 cups shredded cheese of your choice.  I used a combination of Colby and Monterrey Jack cheese. Bake for 15 more minutes. Chipotle Dip/Spread

You will need cream cheese, sour cream, chipotle powder, onion powder, garlic powder, salt, cumin powder and sun dried tomatoes. First combine 8oz softened cream cheese and 1/4 cup sour cream.  Mix well. Add 1/2-3/4 teaspoon chipotle powder, 1/2 teaspoon onion powder, 1/2 teaspoon garlic powder, 1/4 teaspoon salt and 1/8 teaspoon cumin powder.  Mix very well. Add 2 tablespoons finely chopped sun dried tomatoes.  Mix very well. Place in smaller container (with lid) and place in fridge for 1-2 hours so the flavors can combine. Serve with crackers, tortilla chips or you can spread on a hamburger for some extra yummy flavor!! Enjoy!

Chicken Blobs

You will need can of chunk chicken breast, cream cheese, curry powder and crescent rolls. Open and drain a 10oz can of chunk chicken breast.  Place in medium/large bowl and break up the chicken. Add 16oz softened cream cheese and 1/2 teaspoon curry powder. Make sure to mix well. Open a canister of crescent rolls and have the wider end of the crescent towards you.  I usually prep 4 at a time then the other 4. Put a glob - little bigger than a golf ball on the wider end of the crescent, making sure to leave a little space on the sides and bottom of the crescent. Fold over the side corners and softly pinch together with the bottom of the crescent.  Fold over  the top and softly pinch together the sides. On baking sheet spread out evenly.  Bake at 375 for 12-15 minutes. Will be a nice golden brown when done.  Let rest about 5 minutes and then ENJOY ! Chocolate Coke Cake

For the cake you will need sugar, flour,m baking soda, butter, Coke, cocoa, vanilla, eggs, buttermilk and marshmallow cream.   For the frosting you will need butter, cocoa, Coke, pecan chip/bits and powdered sugar.  In a large bowl combine 2 cups of sugar, 2 cups of flour and 1 teaspoon baking soda. In a small sauce pan combine and bring to a boil: 2 stick of butter, 1 cup of Coke and 3 tablespoons of cocoa., make sure to stir occasionally.  To your dry mix (right before your warm mixture is done) add 1 teaspoon vanilla, 2 eggs and 1 cup of buttermilk, mix well. Once your mixture is to a boil add to your mixture in the large bowl and stir well. Now add 7oz of marshmallow creme. Mix in the creme well.  You will have some bigger 'chunks' of the creme so just break them up a little to get to about the size of a mini marshmallow.  Butter and flour a 9x13 pan.  Pour in your mixture and swirl aro...
