Chocolate Coke Cake

For the cake you will need sugar, flour,m baking soda, butter, Coke, cocoa, vanilla, eggs, buttermilk and marshmallow cream.  

For the frosting you will need butter, cocoa, Coke, pecan chip/bits and powdered sugar. 


In a large bowl combine 2 cups of sugar, 2 cups of flour and 1 teaspoon baking soda.

In a small sauce pan combine and bring to a boil: 2 stick of butter, 1 cup of Coke and 3 tablespoons of cocoa., make sure to stir occasionally. 


To your dry mix (right before your warm mixture is done) add 1 teaspoon vanilla, 2 eggs and 1 cup of buttermilk, mix well.

Once your mixture is to a boil add to your mixture in the large bowl and stir well.

Now add 7oz of marshmallow creme.

Mix in the creme well.  You will have some bigger 'chunks' of the creme so just break them up a little to get to about the size of a mini marshmallow. 

Butter and flour a 9x13 pan.  Pour in your mixture and swirl around to make sure all your creme 'chunks' are not all in one area.

Bake at 350 for 50-60 minutes, making sure to insert a toothpick in the center to make sure is done before removing from oven.

Right away in a larger sauce pan melt down 1 stick of butter, 3 tablespoons coca and 6 tablespoons Coke.  Once all melted down add 1/2 cup pecan chips/bits and 3 1/2 cups of powdered sugar.  Mix well.

Pour over cake while it is still warm and spread out evenly.

I had this dish at a restaurant recently and loved it so much I had to recreate it myself.  I only used a recipe for the rice.  The creamy chicken part was just me trying it out and making it work! For the Mexican rice you will need 3 tablespoons vegetable or olive oil, 1 cup uncooked long-grain rice (not minute rice), 1 teaspoon garlic salt, 1/4 cup chopped onion, 1/2 cup tomato sauce, 1 1/2 cups chicken broth and 1/2 cup water. For your creamy chicken you will need 2 tablespoons olive oil, 2 good sized chicken breasts (cut up into bite sized pieces), 1/4 chopped onion, 4 oz mushrooms (drained well), 1/2 teaspoon garlic powder, 1/2 cup enchilada sauce, 4 oz sour cream and 1 cup Monterey Jack cheese. Cornbread made with Cream-Style Corn

You will need corn meal, flour, baking powder, baking soda, salt, sugar, buttermilk, eggs, butter and can of cream corn. You will want to use Corn Meal, not a Cornbread mix for this recipe.  You will first mix your dry ingredients; 2 cups corn meal, 1 cup flour, 3 teaspoons baking powder, 1/2 teaspoon baking soda, 1 teaspoon salt and 1 tablespoon sugar.  Mix together and set aside.   In a separate bowl whisk together 1 cup buttermilk and 3 eggs. Add to your buttermilk/egg mix - 4 tablespoons melted butter and 1-14.75/15oz can of cream corn, mix well. Pour your liquid mixture to your dry mixture and mix well. Pour or scoop your mixture into a greased 9x9 pan. Bake at 425 for 20-25 minutes or until a toothpick inserted in center comes out clean. Let cool for about 10 minutes before cutting. Cheesy Bacon Tater Tot Casserole

You will need 1 pound ground beef, garlic powder, onion powder, cream of mushroom soup, sour cream, tater tots (2 lb bag), cheddar cheese, mozzarella cheese and real bacon bits (3 oz bag).  Brown 1 pound of ground beef, make sure to drain out any grease.  Once browned add a few dashes of onion and garlic powder.  Add 1 10 3/4 oz can cream of mushroom soup and 4 oz of sour cream, mix very well. Spray an 8x8 pan with cooking spray.  Line the bottom with tater tots Pour and spread out your ground beef mixture. Sprinkle on 1/2 cup mozzarella cheese, 1/2 cup cheddar cheese and about 1/2 of your bacon bits.  Now a layer of tots again.  Bake at 350 for 25 minutes. Remove from oven and sprinkle on 1/2 cup mozzarella cheese, 1/2 cup cheddar cheese and the remainder of your bacon bits. Bake an additional 10 minutes. Remove from oven when done and let rest about 5-10 minutes.  Serve up and ENJOY!!...
