You will need zucchini, onion, cheery or grape tomatoes, garlic powder, fat-free cottage cheese, beef, bacon, Alfredo sauce, pasta and cheddar cheese.
Start your water to cook your pasta (1 pound box, your choice) and cook as directed on box.
In a large skillet cook 1 lb lean ground beef. As the beef is cooking, finely chop 1 cup onion and slice and quarter 1 cup zucchini (medium sized zucchini).
Add your onion, zucchini and 1 tablespoon garlic powder to your beef once cooked fully and drained of any extra grease. Lower the heat to low/medium. Cook for around 5-10 minutes to soften up the onions and zucchini. |
Chop up 1 cup cherry or grape tomatoes and add to your beef mixture. |
Add 1/2 cup pre-cooked and crumbled up bacon. Let cook 5 minutes longer, mixing every so often. |
To your beef mixture add 3/4 cup fat-free cottage cheese and 15oz jar Alfredo sauce. Mix very well. Continue to cook on low until your pasta is ready. |
Once your pasta is done, drain well. Add your pasta to your beef mixture and mix well.
Spray a 9x13 pan with cooking spray. Pour your mixture in your pan and sprinkle with 3/4 cup shredded cheddar cheese. |
Bake at 350 for 20 minutes, uncovered. |
Serve up and ENJOY!!! |
