Scalloped Potatoes with Ham

Image
You will need potatoes, onion, ham, butter, salt, pepper, milk, flour, shredded cheddar cheese and sour cream.  Peal and cut up 5 cups of potatoes.  Rinse with cool water, place in large bowl and set aside.  Finely chop up 1 large onion or equal to 1 cup and set aside.  Cut up 3 cups of ham into small squares.  Set aside.  In a large sauce pan melt 1/2 cup (1 stick of butter) on low hear.  Once melted add 2 teaspoons salt, 1/2 teaspoon pepper and 1/2 cup flour.  Stirring occasionally until it thickens.   Remove from heat. Slowly stir in 2 cup of milk and 4oz sour cream.  You can use a small whisk to mix in the sour cream fully.  Place back on the low heat until it begins to thicken and bubble. Stir in your ham, onions and 1 1/2 cups shredded cheddar cheese.  Mix up well. Pour your heated mixture over your potatoes in the large bowl and mix very well. Once mixed pour i...

Pizza Balls

You will need cheese, Canadian bacon, buttermilk biscuits, 1 egg, garlic powder, Italian seasoning, Parmesan cheese and pizza sauce.   Cut up 8oz block of your cheese of choice, I used cheddar jack.  Each piece should be about 1/4 inch thick and 1 inch in length. Set aside. Canadian bacon usually comes in larger slices so you will need to cut them into quarters.     You will need 2 - 10 biscuit cans of buttermilk biscuits.   Place a small piece of wax or parchment paper on your counter to work on so your biscuits do not stick to your counter.  Flatten and stretch out one biscuit at a time.  Place 2 quarters of your Canadian bacon down first, piece of your block cheese and then 2 more quarters of your Canadian bacon. Pull the sides of your biscuit over your Canadian bacon and cheese and then pinch together. Place your 'ball' in a 9x13 glass p...

Breakfast Nests

You will need shredded hash browns (thawed), salt, pepper, olive oil, finely shredded cheddar cheese, turkey sausage and eggs. You can always substitute the turkey sausage with bacon. Combine 26oz shredded hash browns (thawed), 2 teaspoons salt, 1 teaspoon pepper, 2 tablespoons olive oil and 1/2 cup finely shredded cheddar cheese. Spray your muffin tin (regular size) with cooking spray.  Place your hash brown mixture in each cup forming a 'nest'. Bake at 425 for 15 minutes, for the last 5 minutes you will reduce the heat to 350. While your hash browns are cooking chop up 8 pre-cooked turkey sausage patties.  I used a food chopper.   Mix 12 eggs in a medium sized bowl.  Do not add milk but you can add a little bit of salt and pepper. The edges of your hash browns will be golden brown when you remove them. Sprinkle on some of your sausage, about 2-3 tablespoons of your eggs  and a pinch of your finely shredded cheddar cheese. ...
