You will need:
2 lbs beef, 1-1oz packet taco seasoning
1 teaspoon garlic powder
1-10oz can RoTel (you pick your heat)
1 medium white or yellow onion
8oz cream cheese
8oz (2 cups) shredded cheese - I used Cheddar this time
12oz Jumbo Shells (you will count out 25-28)
Get your water started while you start to cook your 2lbs of beef.
Make sure to drain off the excess grease once done. Once fully cooked add your chopped onion.
Mix well and then add your RoTel and garlic powder
Mix well and let simmer for about 10 minutes to let the onions soften. Next add your 8oz of cream cheese and mix well.
Turn off the burner and let cool.
You will cook your Jumbo Shells per the instructions on the box. Once done strain and leave in the strainer. Sprinkle/splash with canola or olive oil so they don't stick and shake well and let cool for about 5-7 minutes. You make extra shells as sometimes a few will tear while cooking.
Now is a good time to preheat the over to 350.
Once the shells have cooled enough to touch you will spray a 9x13 pan with cooking spray. Take 1 shell at a time and using a table spoon thoroughly fill each shell. If you have a little extra filling just place it on top of any shells that seem to be not quite a full. You can see how I have arranged them in the pan below.
Sprinkle your 2 cups of cheese over the top evenly.
Bake at 350 for 20-25 minutes, till the cheese is nice and melty.
Let rest about 5 minutes. Scoop up a few and ENJOY!!
You can add black olives, jalapenos or other veggies and serve with sour cream.
