Katie's Rainbow Chicken Tortilla Soup



This recipe was created by my 2nd cousin Katie & I think she did an amazing job coming up with it!!

You will need 1 lb boneless skinless chicken, 1/4 cup cup chopped green onions, 1/4 cup chopped green peppers, 1/4 cup chopped orange peppers, 1 10oz can Mexican diced tomatoes (Ro-Tel), 1 14.5oz can diced tomatoes (slightly drained), 2 8oz cans tomato sauce, 2 3/4 cups chicken broth, 1 15.25oz can black beans (drained & rinsed), 3/4 of  15.25oz can of corn (drained), salt and pepper to taste.  

Cut your chicken up into bite size pieces and start to cook on medium in 2-3 tablespoons olive oil.
As your chicken is cooking chop up your green pepper, orange pepper and green onion and add them to your chicken as you have them ready.  Stir after adding each ingredient.
This is the Ro-Tel I used but you can get the spicy to add more of a kick to your soup.
Once your chicken is done add your chicken broth, Ro-Tel tomatoes, diced tomatoes, tomato sauce, corn, black beans, salt and pepper.

Cook on medium for about 30 minutes covered and stirring occasionally.
Top with a fiesta cheese blend and serve with tortilla strips or chips.
