This recipe was created by my 2nd cousin Katie & I think she did an amazing job coming up with it!!
You will need 1 lb boneless skinless chicken, 1/4 cup cup chopped green onions, 1/4 cup chopped green peppers, 1/4 cup chopped orange peppers, 1 10oz can Mexican diced tomatoes (Ro-Tel), 1 14.5oz can diced tomatoes (slightly drained), 2 8oz cans tomato sauce, 2 3/4 cups chicken broth, 1 15.25oz can black beans (drained & rinsed), 3/4 of 15.25oz can of corn (drained), salt and pepper to taste.

Cut your chicken up into bite size pieces and start to cook on medium in 2-3 tablespoons olive oil. |

As your chicken is cooking chop up your green pepper, orange pepper and green onion and add them to your chicken as you have them ready. Stir after adding each ingredient. |

This is the Ro-Tel I used but you can get the spicy to add more of a kick to your soup. |

Once your chicken is done add your chicken broth, Ro-Tel tomatoes, diced tomatoes, tomato sauce, corn, black beans, salt and pepper.
Cook on medium for about 30 minutes covered and stirring occasionally. |

Top with a fiesta cheese blend and serve with tortilla strips or chips.
