Bourbon Chicken



You will need 2 2 tablespoons olive oil, 2 lbs chicken, 1 garlic clove, 1/4 teaspoon ginger, 3/4 teaspoon crushed red pepper, 1/4 cup apple juice, 1/3 cup (packed) light brown sugar, 2 tablespoons ketchup, 1 tablespoon cider vinegar, 1/3 cup water, 1/3 cup soy sauce and 4 oz fresh mushrooms - chopped (optional). 


Cut up your chicken into bite size pieces and cook in your olive oil till done.  Take out of pan and set aside.
While your chicken is cooking, combine in a small bowl the remainder of your ingredients except your mushrooms.

Once your chicken is done place this mixture in the same pan you cooked your chicken in.  Cook on medium heat till well combined.
Add your chicken back into the pan and raise the heat to medium high and bring to a hard boil, you will now add your mushrooms if desired.  Once the boil is reached, reduce heat and let simmer for 25 minutes stirring every 5-7 minutes.
Serve over rice and ENJOY!!

This recipe does have a little bit of heat to it so if you don't enjoy heat just reduce the amount of crushed red pepper you use.
