Chocolate Marshmallow Meltaways



For the cookies you will need:  1/2 cup butter-flavored shortening, 3/4 cup sugar, 1 egg, 1/4 cup 2% milk, 1 teaspoon vanilla extract, 1 3/4 cup all purpose flour, 1/2 cup baking cocoa, 1/2 teaspoon salt and 1/2 teaspoon baking soda.

For the frosting you will need:  3 tablespoons butter, softened, 3 cups powdered sugar, 3 tablespoons baking cocoa, 1/8 teaspoon salt and 4-6 tablespoons 2% milk.

You will also need large marshmallows, halved.

In a large bowl, cream shorting and sugar until light and fluffy.
Beat in the egg, milk and vanilla.

In a separate bowl combine the flour, cocoa, salt and baking soda. 
Gradually add your dry mixture to your creamed mixture and mix very well (it will be thick).
Roll about tablespoon sized balls and place on an un-greased baking sheet.
Bake at 350 for 8 minutes, remove and slightly press a half large marshmallow into the top of each cookie.

Bake 2 minutes longer.
Remove from baking sheet and place on wire rack to cool completely. 
While your cookies are cooling you can make your frosting.

Beat your butter, powdered sugar, cocoa and salt until smooth.  Add enough milk to achieve a spreading consistency.  
Using a tablespoon 'pour' your frosting over each cookie.  The frosting will get a 'crust' once set.
