For the cookies you will need: 1/2 cup butter-flavored shortening, 3/4 cup sugar, 1 egg, 1/4 cup 2% milk, 1 teaspoon vanilla extract, 1 3/4 cup all purpose flour, 1/2 cup baking cocoa, 1/2 teaspoon salt and 1/2 teaspoon baking soda.
For the frosting you will need: 3 tablespoons butter, softened, 3 cups powdered sugar, 3 tablespoons baking cocoa, 1/8 teaspoon salt and 4-6 tablespoons 2% milk.
You will also need large marshmallows, halved.
In a large bowl, cream shorting and sugar until light and fluffy. |
Beat in the egg, milk and vanilla.
In a separate bowl combine the flour, cocoa, salt and baking soda. |
Gradually add your dry mixture to your creamed mixture and mix very well (it will be thick). |
Roll about tablespoon sized balls and place on an un-greased baking sheet. |
Bake at 350 for 8 minutes, remove and slightly press a half large marshmallow into the top of each cookie.
Bake 2 minutes longer. |
Remove from baking sheet and place on wire rack to cool completely. |
While your cookies are cooling you can make your frosting.
Beat your butter, powdered sugar, cocoa and salt until smooth. Add enough milk to achieve a spreading consistency. |
Using a tablespoon 'pour' your frosting over each cookie. The frosting will get a 'crust' once set.
