Cheesy Chili

I have won a few cook-off's with my recipe. You will need 3 peppers (different colors), medium sized onion, tomato soup, cheddar cheese soup, chili beans, beef, mild cheddar cheese, Lawry's seasoning salt, chili powder and Frito Scoops for eating the chili. You will want 3 medium sized peppers, chop into about 1/4 inch size pieces.  Chop up a medium sized onion into 1/4 inch size pieces.  Cook 1 pound lean ground beef.  Once done lower heat to medium and add your peppers, onion, a couple dashes of Lawry's seasoning salt and 3-4 dashes of chili powder of your choosing.  Cook for about 10 minutes, stirring occasionally.  After the 10 minutes lower heat to low and add 1 10 3/4 oz can tomato soup, 10 3/4 oz can cheddar cheese soup and 1 15 oz can Tex Mex style chili beans in chili sauce.  Mix up well. Banana Bread

You will need 2-3 ripe bananas, flour, sugar, baking powder, baking soda, salt, butter, milk, eggs and chopped walnuts (optional)  You will need 2-3 ripe bananas to mash up to equal 1 cup. Peal the bananas and mash up prior to putting in mix. In a medium/large bowl combine 1 cup flour, 2/3 cup sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda and 1/4 teaspoon salt.  Once mixed add your 1 cup mashed bananas, 1/3 cup melted butter and 2 tablespoons milk.  Mix well with blender. Next add 2 eggs and 3/4 cup flour.  Mix well.  Add 1/2 cup chopped walnuts (optional) and mix well. Pour your mixture into greased (and floured if an older pan) loaf pan. Bake at 350 for 55-60 minutes.  Insert toothpick into center and make sure comes out clean. Let cool in pan on a rack for 10 minutes.  Remove from pan and continue cooling on rack for at least 1 hour before slicing.  Slice up and ENJOY!!

Russian Chicken

You will need Russian dressing, whole berry cranberry sauce, onion soup mix, boneless-skinless chicken tenderloins and rice In a medium bowl combine your Russian dressing (8oz), whole berry cranberry sauce (14oz) and 1 packet dry onion soup mix. Grease an 8x8 pan, bottom and sides.  Spread just enough of you mixture to cover the bottom of the pan. Place your chicken (1 pound) on top of the mixture, trying not to overlap the chicken.  Cover your chicken with your remaining mixture. Bake at 350 for 1 hour, uncovered. Let rest 5-10 minutes before dishing up.  Serve with rice. Enjoy!!!

Chicken Alfredo

You will need boneless-skinless chicken breasts, butter, whole milk ricotta cheese, heavy cream, salt, Parmesan cheese and pasta.  Cut up 1 - 1 1/2 pounds of boneless-skinless chicken breasts into bite size pieces.  Cut up 1 1/2 cups of butter into 2 tablespoon chunks. Place one of your 2 tablespoon chunks of butter in a large sauce pan on medium heat and melt down.  Once melted add your chicken. At this time you will want to start your water for your pasta. Cook your chicken thoroughly, no pink can be seen.  Place in a medium sized bowl and cover with a towel, set aside.   In the same large sauce pan that you cooked your chicken in, combine your remaining butter, 32 oz of whole milk ricotta cheese, 1 pint heavy cream, 1 teaspoon salt and 1 cup grated Parmesan cheese.  Cook at medium heat stirring occasionally.  Cook about 10 minutes.
