You will need bacon, sausage, pancake mix, butter and syrup.
Start by cutting up 6 slices of pre-cooked bacon into small pieces and 4 pre-cooked sausage links into thirds. Set aside. |
Mix your pancake mix per the instructions on the mix (you will want enough mix for 10-12 pancakes). Spray your mini muffin pan with cooking spray. Place a small amount of your pancake mix into the bottom of each cup. |
Place a layer of your bacon in half the cups (you will want a little left over to sprinkle over the top of your bacon cakes) and a piece of your sausage in the other half. |
Pour pancake mix over the top of your bacon and sausage to cover fully. Sprinkle a little bacon on the top of each of your bacon cakes. |
Bake at 350 for 12-15 minutes. They will fluff up and be golden brown around the edges.
To remove: use a toothpick to gently press away from the sides and then you can pop them out easily. |
Drizzle each with a little bit of melted butter and serve with warm syrup. |
Enjoy!!
