Creamy Pineapple Cheesecake Dip

  You will need 1 - 8 oz package regular cream cheese softened, 1/2 cup sugar, 1 - 20 oz can crushed pineapple - drained very well and 2 cups cool whip - extra creamy if available. In a large bowl mix cream cheese and sugar together. Will kind of look like a thick frosting. You will then add in your Cool Whip mix until blended well. And then your pineapple. Once mixed well and nice and smooth place into the bowl you want to serve in and cover. Place in fridge for a minimum of two hours.  Serve with sliced fruit or pretzels. If you want to mix it up a bit you can use strawberry cream cheese instead of regular, you will want to cut the sugar down to 1/3 cup. ENJOY!!

Cheesy Chicken Fajita Casserole/Dip

 You will need 3 12.5 cans Chunk Chicken Breast, 3 medium bell peppers, 1 small onion, 1 8oz cream cheese, 1 package taco seasoning, 2 cups shredded cheese and 1 tablespoon olive oil Chop up your 3 peppers - I used a red, orange and yellow - and your onion - I used a yellow onion - and place them in a large pan with your 1 tablespoon of olive oil on medium heat for about 10 minutes to soften them up. After the 10 minutes add your 8oz cream cheese and melt it down.  You will now want to turn on your oven to 350. Add your taco seasoning once your cream cheese has melted down. Strain your chicken and break it up.  Add to your pan and stir it up well. Add 1 cup of your shredded cheese - I used a Fiesta blend, it contains a combination of Monterey jack, cheddar, queso quesadilla and asadero cheese - mix well. Spray a 9x13 baking dish with non-stick spray and put your mixture in and sprinkle your remaining cup of cheese over the top. Bake at 350 for 25-30 minutes, uncovered. Se...

Taco Stuffed Shells

You will need: 2 lbs beef, 1-1oz packet taco seasoning  1 teaspoon garlic powder  1-10oz can RoTel (you pick your heat) 1 medium white or yellow onion 8oz cream cheese 8oz (2 cups) shredded cheese - I used Cheddar this time 12oz Jumbo Shells (you will count out 25-28) Get your water started while you start to cook your 2lbs of beef. Make sure to drain off the excess grease once done.  Once fully cooked add your chopped onion. Mix well and then add your RoTel and garlic powder Mix well and let simmer for about 10 minutes to let the onions soften.  Next add your 8oz of cream cheese and mix well. Turn off the burner and let cool. You will cook your Jumbo Shells per the instructions on the box.  Once done strain and leave in the strainer.  Sprinkle/splash with canola or olive oil so they don't stick and shake well and let cool for about 5-7 minutes.  You make extra shells as sometimes a few will tear while cooking.    Now is a good time to prehea...
