Mini Pumpkin Pie Tarts

You will need: Topping - 1/4 cup flour, 1/4 cup firmly packed brown sugar, 1/4 cup finely chopped pecans and 2 tablespoons softened butter. Crust - 3/4 cup softened butter, 6 oz softened cream cheese, 1 1/2 cup flour and 1/2 teaspoon cinnamon.  Filling - 1 - 14 oz can sweetened condensed milk, 1 1/4 cup canned pumpkin, 1 egg  and 1 teaspoon pumpkin pie spice. Topping - combine all topping ingredients in small bowl, mix with fork until mixture resembles crumbs.  Set aside. Crust - combine your softened butter and cream cheese in medium bowl on medium until well mixed.  Add your flour and cinnamon and blend on medium until dough forms.  Place in fridge for about 5 minutes. Filling - combine all ingredients in large bowl and whisk together until smooth. You will have enough filling and topping for a double batch of the dough. Cheeseburger Pie

You will need 1 lb ground beef, 1 cup finely chopped onion, 1/2 teaspoon salt, 1/2 teaspoon garlic powder, 1-1 1/2 cups shredded cheddar cheese, 1 cup milk, 2 eggs and 3/4 cup Bisquick mix. In a large skillet cook your 1 lb ground beef and 1 cup finely chopped onions.  Drain any excess grease, add your 1/2 teaspoon salt and 1/2 teaspoon garlic powder.  Mix well. Spray a 9 inch glass pie pan with non-stick spray.  Pour in your beef mixture and cover with 1  - 1 1/2 cups shredded cheddar cheese. In a small bowl combine your 1 cup milk, 2 eggs and 3/4 cup Bisquick mix, mix well, it is ok if you have a few small lumps. Pour over your beef mixture and cheese. Bake at 400 for 25-30 minutes.  Will be a nice golden brown. You can insert a knife into the center and if it comes out dry you know it is done. Let rest about 10 minutes.  Cut into 6 equal pieces and serve. Top with your favorite burger toppings or eat as is.   ENJO...
