Easy Baked Mac n Cheese

You will need noodles, Velveeta cheese, blend of cheeses, mozzarella cheese and butter. Boil 16oz of noodles till done.  Drain very well. While your pasta is cooking you can prep your cheeses and butter.  Cut up 16oz of Velveeta cheese into smaller chunks. You will need 1 cup of a blend of cheese (I used this one and the flavors were great) and 1 cup of mozzarella cheese. Cut up 1 stick of butter into smaller chunks.  Once your pasta is done and well drained pour into a well buttered 9x13 pan.  'Sprinkle' on 1/2 of your Velveeta cheese and 1/2 of your butter.  Mix well. 'Sprinkle' on the rest of your Velveeta, butter and the 2 cups of your other cheeses.  Mix well. Bake at 350 for 30 minutes. Mix your mac and cheese once more when done baking.  Dish up and   ENJOY!!

Cheesy Bacon Tater Tot Casserole

You will need 1 pound ground beef, garlic powder, onion powder, cream of mushroom soup, sour cream, tater tots (2 lb bag), cheddar cheese, mozzarella cheese and real bacon bits (3 oz bag).  Brown 1 pound of ground beef, make sure to drain out any grease.  Once browned add a few dashes of onion and garlic powder.  Add 1 10 3/4 oz can cream of mushroom soup and 4 oz of sour cream, mix very well. Spray an 8x8 pan with cooking spray.  Line the bottom with tater tots Pour and spread out your ground beef mixture. Sprinkle on 1/2 cup mozzarella cheese, 1/2 cup cheddar cheese and about 1/2 of your bacon bits.  Now a layer of tots again.  Bake at 350 for 25 minutes. Remove from oven and sprinkle on 1/2 cup mozzarella cheese, 1/2 cup cheddar cheese and the remainder of your bacon bits. Bake an additional 10 minutes. Remove from oven when done and let rest about 5-10 minutes.  Serve up and ENJOY!!...

Cheesy Chili

I have won a few cook-off's with my recipe. You will need 3 peppers (different colors), medium sized onion, tomato soup, cheddar cheese soup, chili beans, beef, mild cheddar cheese, Lawry's seasoning salt, chili powder and Frito Scoops for eating the chili. You will want 3 medium sized peppers, chop into about 1/4 inch size pieces.  Chop up a medium sized onion into 1/4 inch size pieces.  Cook 1 pound lean ground beef.  Once done lower heat to medium and add your peppers, onion, a couple dashes of Lawry's seasoning salt and 3-4 dashes of chili powder of your choosing.  Cook for about 10 minutes, stirring occasionally.  After the 10 minutes lower heat to low and add 1 10 3/4 oz can tomato soup, 10 3/4 oz can cheddar cheese soup and 1 15 oz can Tex Mex style chili beans in chili sauce.  Mix up well. Banana Bread

You will need 2-3 ripe bananas, flour, sugar, baking powder, baking soda, salt, butter, milk, eggs and chopped walnuts (optional)  You will need 2-3 ripe bananas to mash up to equal 1 cup. Peal the bananas and mash up prior to putting in mix. In a medium/large bowl combine 1 cup flour, 2/3 cup sugar, 2 teaspoons baking powder, 1/2 teaspoon baking soda and 1/4 teaspoon salt.  Once mixed add your 1 cup mashed bananas, 1/3 cup melted butter and 2 tablespoons milk.  Mix well with blender. Next add 2 eggs and 3/4 cup flour.  Mix well.  Add 1/2 cup chopped walnuts (optional) and mix well. Pour your mixture into greased (and floured if an older pan) loaf pan. Bake at 350 for 55-60 minutes.  Insert toothpick into center and make sure comes out clean. Let cool in pan on a rack for 10 minutes.  Remove from pan and continue cooling on rack for at least 1 hour before slicing.  Slice up and ENJOY!!

Russian Chicken

You will need Russian dressing, whole berry cranberry sauce, onion soup mix, boneless-skinless chicken tenderloins and rice In a medium bowl combine your Russian dressing (8oz), whole berry cranberry sauce (14oz) and 1 packet dry onion soup mix. Grease an 8x8 pan, bottom and sides.  Spread just enough of you mixture to cover the bottom of the pan. Place your chicken (1 pound) on top of the mixture, trying not to overlap the chicken.  Cover your chicken with your remaining mixture. Bake at 350 for 1 hour, uncovered. Let rest 5-10 minutes before dishing up.  Serve with rice. Enjoy!!!

Chicken Alfredo

You will need boneless-skinless chicken breasts, butter, whole milk ricotta cheese, heavy cream, salt, Parmesan cheese and pasta.  Cut up 1 - 1 1/2 pounds of boneless-skinless chicken breasts into bite size pieces.  Cut up 1 1/2 cups of butter into 2 tablespoon chunks. Place one of your 2 tablespoon chunks of butter in a large sauce pan on medium heat and melt down.  Once melted add your chicken. At this time you will want to start your water for your pasta. Cook your chicken thoroughly, no pink can be seen.  Place in a medium sized bowl and cover with a towel, set aside.   In the same large sauce pan that you cooked your chicken in, combine your remaining butter, 32 oz of whole milk ricotta cheese, 1 pint heavy cream, 1 teaspoon salt and 1 cup grated Parmesan cheese.  Cook at medium heat stirring occasionally.  Cook about 10 minutes. Mini Bacon and Sausage Cakes

You will need bacon, sausage, pancake mix, butter and syrup. Start by cutting up 6 slices of pre-cooked bacon into small pieces and 4 pre-cooked sausage links into thirds.  Set aside. Mix your pancake mix per the instructions on the mix (you will want enough mix for 10-12 pancakes).  Spray your mini muffin pan with cooking spray.  Place a small amount of your pancake mix into the bottom of each cup. Place a layer of your bacon in half the cups (you will want a little left over to sprinkle over the top of your bacon cakes)  and a piece of your sausage in the other half. Pour pancake mix over the top of your bacon and sausage to cover  fully.  Sprinkle a little bacon on the top of each of your bacon cakes. Bake at 350 for 12-15 minutes.  They will fluff up and be golden brown around the edges. To remove: use a toothpick to gently press away from the sides and then you can pop them out easily.  Drizzl...
